«Del maiale non si butta via niente»: raramente proverbio è così vero. Da quando l’uomo ha iniziato ad addomesticarlo, tra il VII e il VI millennio a.C., il maiale si è rivelato una preziosa fonte di ricchezza: la sua carne è sinonimo di scorpacciata, il suo sangue e le budella sono usate per sanguinacci e salsicce, il grasso per le candele, la pelle e i tendini per fare corde di strumenti musicali, le setole spazzole e pennelli. Ciononostante, nel corso dei secoli il maiale ha conosciuto alterne fortune, che lo hanno visto animale degno di essere sacrificato agli dèi in Egitto e in Grecia, trasformato poi in simbolo di lussuria per colpa del manto rosa che lo fa sembrare nudo e addirittura condannato davanti a tribunali in piena regola con l’accusa di infanticidio. Un destino di alti e bassi, quello di questo nostro “cugino poco amato”, che attraverso lo sguardo di Michel Pastoureau diventa lo specchio della mutevole storia culturale e sociale dell’uomo, una riflessione colta e prosaica su un rapporto ambivalente e sempre passionale tra noi e l’animale biologicamente a noi più affine, a cui è sempre più legata la nostra sopravvivenza.
